Today's Recipe Is...


Baby J. and I had a great day yesterday. Great but exhausting. One of the things we did was come up with a delicious dinner. Both grandpa and hubby praised it for its tastefulness.


Ingredients:
  • red, green, and yellow bell pepper
  • 3-4 carrots
  • 1 onion (red or yellow)
  • 1 can sliced mushrooms
  • 1 bag spaetzle
  • ground paprika
  • salt
  • pepper
  • vegeta
  • olive oil or canola oil
  1. I used about half of each bell pepper, and sliced it into thin slices. The carrots were then peeled and cut into fours before getting chopped into pinky length slices.
  2. Slice the onion into thin slices.
  3. Empty the can of mushrooms into a strainer.Set aside.
  4. Set a medium sized pot of water with some salt to boil, then add the spaetzle. After they are done boiling dump them into a strainer and run them under cold water for 30 seconds-1 minute. Then set them aside to drain properly of all water.
  5. In a large pan set the olive oil or canola oil to heat. You will need enough to generously cover the bottom of the pan. Once the oil is heated add your onions. After 3-4 minutes add the sliced bell peppers.
  6. Once, the bell peppers and onions are half way done add the mushrooms.
  7. Then, add the carrots and start seasoning. Season according to YOUR taste. Add your salt, pepper, paprika, and vegeta to the mix. Enjoy the delicious aroma that is starting to fill your kitchen.
  8. Once all the vegetables are well done add the spaetzle. They should be well drained by now. Mix well with the vegetables and sauce.
  9. Enjoy a delicious and filling meal of spaetzle with mushrooms, carrots, and bell peppers. 
    TIP: A side salad goes along well with this meal.

The Everyday Mommy On A Rainy Day.

It's definitely not the sunny weather outside that everyone has been expecting.

I was just a tad bit disappointed because I'd hoped to get some playground time into our very relaxed schedule for today. The rain though is kind of making that impossible.

So instead little Baby J. went down for an early morning nap,he woke up at 5 A.M. ...again. And mommy went a little wild. 

Oh yea below is a picture of the party scene:

Oh yes, that's Nutella. Go ahead and drool...it was so yummy!

Nothing better than a nice cup of tea and a good book on a rainy day.
Rainy days tend to bring out the wild side of me. I actually allow myself time to breakfast and ...GASP...read!! And that cup of tea was absolutely delicious! It was a blackberry and raspberry tea.

After actually getting around to eating and even reading two absolutely wonderful chapters. (I haven't had time to read in forever so this was a real treat) Baby J. started to whine from the bedroom so I went and laid next to him in bed and even got in a wonderful hour of extra sleep!!

The world must be coming to an end because today is just going unbelievably great! I've gotten to eat breakfast, read, and even nap a little!! It's almost too good to be true. Except that it is. True, I mean.

Next up, was lunchtime which Baby J. helped me pick out. He has such good taste this child of mine. 


I know, I know that looks more like breakfast but it really hit the spot for all of us. A salami with margarine roll, some grape tomatoes, Gouda cheese, and scrambled eggs. Why are the scrambled eggs that color? Are they burnt? Nope not burnt, we just love adding some paprika to them before letting them hit the pan. It gives the eggs a nice color and makes them extra yummy.

Baby J. got to enjoy his very first taste of tomatoes, cheese, and scrambled eggs. He loved them all! He made sure to follow in mommy's footsteps and wash everything down with some water and something sweet. Namely, a milch-schnitte. A milch-schnitte, is absolutely yummy according to Baby J. Who went as far as getting it not just in his mouth but all over his face,hands, clothes, in his hair and even his ears!!

Everyone at Mommy Headquarters agrees these must be on hand at all times...you know for the times you need something sweet.

Baby J. ended up taking a bath and we then played a few games. Now it's time for another nap. 

For the both of us. Better said the three of us, Baby#2 has no choice but to join in the fun of sleeping.

A Quick To Make Recipe.

So, I thought I'd share a quick and way easy and simple recipe to make. I'm sure somewhere out in the world wide web there is another one similar to mine...maybe even identical. I can completely honestly though say that I made this recipe using just my imagination and the ingredients in my kitchen.




First off you will need:
  • pork cutlet
  • broccoli
  • mushrooms
  • green bell peppers
  • olive oil
  • salt
  • paprika
  • vegeta 
  • teriyaki sauce

For those of you who don't know what vegeta is it's a mix of condiments, I included the picture of the package below:



I used fresh mushrooms so that meant I had to wash and peel the outer layer before chopping them into fine slices. Not too thin because they become very small in the pan.

Following that, I also sliced the bell pepper into medium thin slices. I used green because that was on hand but had there been yellow and red in my fridge as well those would have joined the green bell pepper.

Next, I also sliced the pork cutlet into about pinky sized pieces length and width wise.

Now, comes the fill your house with yummy smells part, put some olive oil into a large pan on the stove. Add the pork cutlet. You want the heat to be on small so it will get thoroughly cooked. 

Then, after the meat pieces are cooked and lightly browned add the broccoli. Cover the pan and occasionally stir. 

After the broccoli is partially cooked add the bell pepper and mushroom.

Now, go ahead and add the salt, paprika, vegeta, and teriyaki sauce. Do all of this according to YOUR taste. 

Serve with a nice dish of white rice (or any other rice of your choice) and a wonderful tasty salad along the side.


Hubby declared it ABSOLUTELY DELICIOUS!!!
